Understanding Hand Rolled Bagels

These New York City bagels are hand rolled by skilled dough rollers. Most hail originally hail from Greece or Mexico.

Hand rolling bagels makes an enormous difference vs. machine-produced bagels. The crust takes on a more desirable texture, and of course no two are exactly alike. Our best rollers can hand roll around 1,600 fresh bagel per hour.
